For pork, I use either apple or pecan. I want to say this was an apple wood smoke.

For beef, I use hickory. IMO, mesquite is a shitty wood that Texans have managed to convinced people is good.

Hmmm... Every time I've used hickory the meat seems to turn out bitter. I usually use mesquite for my tri tip.

I use hickory logs and never go above 225. Never had it turn out bitter
